Sake / Nihonshu

The Japanese fermented rice beverage. Sake in Japanese means alcohol generally — nihonshu is the specific term. Made from rice, water, koji mould, and yeast. One of the most complex and varied beverage categories in the world, and one of the only ones routinely served across a wide range of temperatures.
